Ingredients (4 servings)
Salmon
- 4 salmon fillets
- 1 tbsp olive oil
- Salt & black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
Pasta & Sauce
- 12 oz pasta (fettuccine or penne works best)
- 2 tbsp butter
- 5 cloves garlic, minced
- 1 small yellow onion, finely diced
- 1 cup heavy cream
- 1 cup freshly grated parmesan
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 tbsp tomato paste
- 2 tbsp fresh basil, chopped
- 2 tbsp Horned Viper Reserve (mild medium) OR 4 tbsp Horned Viper Reserve (spicy version)
- Optional: crushed red pepper flakes for extra fire

Instructions
1. Cook the Pasta
Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/2 cup pasta water before draining.
2. Season & Sear the Salmon
Pat salmon dry and season with salt, pepper, smoked paprika, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Sear salmon 3–4 minutes per side until golden and cooked through. Remove and set aside.
3. Build the Sauce
Lower heat to medium. Add butter, onion, and garlic to the skillet. Cook until fragrant and softened. Stir in tomato paste and sun-dried tomatoes; cook 1–2 minutes to deepen flavor. Pour in chicken broth and scrape up the flavorful bits from the pan. Add heavy cream, parmesan, and Horned Viper Reserve. Simmer until smooth and creamy.
4. Combine
Add cooked pasta to the sauce and toss until coated. If needed, loosen sauce with reserved pasta water. Flake salmon into large chunks and gently fold into the pasta. Finish with fresh basil and extra parmesan.
